Step 1
Preheat oven to 350F/175C
Step 2
In a large bowl, whisk together oats, buckwheat flour, baking soda, and cardamom
Step 3
In a separate bowl, whisk together eggs, unsweetened plant-based milk, oil, honey, and vanilla
Step 4
Add egg mixture to the oat mixture and mix until combined
Step 5
Add the blueberries and sea salt and fold them into the mixture
Step 6
Line an 8x8in (20cm x 20cm) baking dish with parchment paper and pour in the blueberry mixture
Step 7
Bake for 35-40 minutes, until golden
Step 8
Leave the pan to cool down for 10 minutes, slice into 9 bars, and let them cool completely
Step 9
Store in the refrigerator
