Linda’s Hummus Three Ways

Ingredients
5 servings

2 x 15 ozcans of chickpeas

3 Tbsplemon juice
plus extra to taste

1garlic clove
medium

1 ¼ tspsalt

6 Tbsptahini

2 Tbspextra virgin olive oil
plus extra to drizzle
To Serve:
flat leaf
or finely chopped Italian parsley

½ tspsweet smoked paprika

2 Tbsproasted pine nuts

vegetable sticks

Instructions
Step 1
Drain chickpeas.
Step 2
Peel and crush garlic clove.
Step 3
Place chickpeas, lemon juice, garlic, salt, tahini, and 2 tbsp of oil in a food processor and add 2/3 cup of water.
Step 4
Add more lemon juice to taste and store in airtight container.
Step 5
Serve with parsley, paprika, and pinenuts scattered over and drizzle olive oil when ready to eat.
Step 6
For Red Pepper Hummus: Add 1/4 a cup of drained, red peppers from a jar to the food processor.
Step 7
For Red Pepper Hummus: Sprinkle with chopped parsley.
Step 8
For Harrisa & Pumpkin Seed Hummus: add 1-2 tbsp of harissa in the food processor & sprinkle with seeds.
