Ingredients

250gcan chickpeas
0.5juice of lemon
1 tspsalt
2 Tbsptahini
water
ice cold
1garlic clove
Olive oil
for topping
Paprika
for topping, optional
To remove the chickpea skins
Instructions
Step 1
Bring some water (enough for all the chickpeas to fit) to a boil and add the baking soda. Boil the canned chickpeas (rinsed) for 15 minutes.
Step 2
Drain and move them to a bowl with ice cold water. With your hands, lightly squeeze the chickpeas and remove as many skins as you possibly can (the fewer the more creamy final result)
Step 3
To a blender, add the skinless chickpeas and all the other ingredients excluding the ice cold water. Once 90% blended, add the water (this could vary from 2 to 5tbsp depending on how liquidy you’d like the hummus)
Step 4
Serve it in a small plate and create a bit of a well in the centre with a spoon. Add olive oil and dust it with some paprika if you’d like. Enjoy!
