Instructions
Step 1
Drain and rinse navy beans.
Step 2
Peel and crush garlic cloves.
Step 3
Chill and finely chop onion.
Step 4
Add the oil to pan and place over medium heat.
Step 5
Stir in chopped onion and fry gently for 8-10 minutes until soft but not colored.
Step 6
Add garlic and paprika and fry for 2 minutes until you smell the aroma.
Step 7
Add remaining ingredients and a teaspoon of salt to bring to a boil.
Step 8
Reduce heat to low simmer gently for 30 minutes, stirring occasionally until the mixture has thickened.
Step 9
Season generously with salt and pepper and add a little more maple syrup or red wine vinegar to taste.
