Instructions

Step 1
12 hours before mixing the dough, mix the ingredients for 1/2 cup of active starter. Let ferment in the RT for 12h
Step 2
Mix together water, starter, sugar and salt. Add the bread flour and use your hands to bring the dough together. It will be stiff. Knead for 10 min. Then cover the bowl and proof for 8-12h in RT
Step 3
Divide the dough into 8 equal pieces. Shape each piece into a long "worm", so you have enough to make into a pretzel shape. Cover the shaped pretzels with towel and proof for 30-60min
Step 4
Preheat oven to 220°. Then boil water for the soda bath.
Step 5
Boil each piece for 30s on each side. Then put them back to baking paper. Brush each pretzel with egg wash and sprinkle finger salt.
Step 6
Bake for 15min.
