Sweet Potato Power Bowl with Italian Sausage, Onion, and Mushrooms

A rewrite of The Pineapple Cooks sweet potato and sausage bowl that uses similar ingredients but actually has instructions! A side of salad or pasta works well with this meal.

Instructions

Step 1
Put tinfoil on a baking sheet, then put the sausages on the tinfoil. Don't pierce the skin. Place the baking sheet and sausages in a cold oven then turn the heat to 350°. Once the heat is at 350°, cook for 25 minutes or until the internal temperature is 160°.
Step 2
While the sausage is cooking, peel and cut the sweet potatoes into 1/2" cubes, peel the carrots and cut into 1/4" discs, cut the mushrooms into quarters, and mince/press the garlic. When the sausage is out of the oven, take it out and let the sheet pan cool on a cooling rack. When the sausage is cool enough to touch, use a serrated knife to cut into 1/4" discs.
Step 3
While the sausage is cooling, in a large pan that has a cover, add 2 tbsp oil and heat on medium. Once hot, add sweet potatoes, carrots, and onions. Stir and add the greek seasoning, oregano, and seasoning salt. Cover and cook for 10 minutes, stirring every so often, or until the sweet potatoes and carrots can be pierced by fork. Add the mushrooms and the sliced sausage to the pan and cook uncovered for five more minutes. Add garlic and stir for 1 minute, then remove from heat.
Step 4
Meanwhile, in a bowl, mix the sour cream, hot sauce, water, lemon juice, garlic powder, and salt. Prepare the toppings: fry an egg, cut an avocado and a lemon into wedges.
Step 5
Pile a serving of the skillet sweet potato & sausage on a plate, and add toppings.
