Easy Spinach Grilled Cheese

Instructions

Step 1
Place spinach, cheese, cream cheese, salt, and cumin into food processor. Blend until smooth, stopping to scrape down sides of bowl as needed.
Step 2
Divide the mixture between 2 slices of bread and spread evenly.
Step 3
Warm skillet over medium heat. When warm, add butter to skillet to melt.
Step 4
Add bread slices with filling and swirl to coat with butter. Top with remaining slices of bread and cook 4 minutes. Flip over, swirl to coat with butter and cook 4 more min until golden brown and filling is melted.
Step 5
Cut in half and serve warm.
Step 6
Store leftover mix in fridge for 3 days. Use baby spinach or regular size leaves with stem removed. Let cool before slicing.
