Step 1
Season chicken with salt & pepper & herbs of choice. Cook in the oven until cooked through
Step 2
Chop veg into bite-size pieces.
Step 3
In a large bowl, add the lettuce/rocket as the base and then top with the mango feta, blueberries, peppers, onion and tomatoes.
Step 4
Once chicken is cooked, slice it and add it on top. Pour balsamic on top before serving.
