Ingredients

2 cupsfresh cilantro leaves
½ cupolive oil
½ cupplain greek yogurt
¼ cuplimes
small, juiced
2 teaspoonshoney

½ teaspoonground coriander

1 x 5 ouncemixed greens
2 earsfresh corn
kernels only
0.5red onion
halved and sliced thin
1avocado
sliced
1 cupstrawberries
halved
1 cupblueberries
1 tablespoonolive oil
1 teaspoonchipotle chili powder
1 teaspoongarlic powder
1 teaspoonground cumin
½ teaspoondried oregano
2 poundschicken tenders
Instructions
Step 1
In a gallon size freezer bag, mix the oil and seasonings.
Step 2
Add the chicken tenders to the bag and massage the bag until all of the chicken is coated.
Step 3
Refrigerate for 1 hour.
Step 4
Preheat the oven to 400 degrees.
Step 5
Prepare a 9x13 baking dish with nonstick cooking spray.
Step 6
Transfer the chicken tenders to the prepared dish and place in a single layer.
Step 7
Bake for 25 to 30 minutes or until cooked through.
Step 8
Place the ingredients into a food processor or blender.
Step 9
Blend until the dressing is smooth. Refrigerate until ready to use.
Step 10
Place the salad greens into a serving dish or individual salad bowls and arrange the other ingredients over the greens.
Step 11
Top the salads with the cooked chicken.
Step 12
Serve with the dressing.
