Instructions
Step 1
preheat the oven to 200C. Line a baking sheet with parchment paper.
Step 2
Slice the chicken breasts horizontally to create four thinner fillets. Season with salt and pepper. Place the chicken onto the prepared baking sheet. Spread a teaspoon of pesto over each piece of chicken.
Step 3
Bake in the oven for 15 minutes or until the chicken is cooked.
Step 4
Remove the baking sheet from the oven. Top the chicken with sliced tomato, mozzarella, and Parmesan cheese.
Step 5
Return the baking sheet to the oven and bake for 3-5 minutes, or until the cheese has melted. Serve.
