Step 1
Preheat oven 180
Step 2
Peel and remove seeds from pumpkin and dice into roughly 3cm chunks
Step 3
Place diced pumpkin in a bowl drizzle with oil and season with salt and pepper, then transfer to baking dish and cook in oven for 30 minutes until just cooked
Step 4
Lightly mash pumpkin keeping it nice and chunky
Step 5
Fry the leeks, garlic, bacon and butter over medium heat until lighting golden
Step 6
Combine cooked leek mixture with cream, nutmeg and pumpkin in a bowl
Step 7
Spoon mixture into greased oven baking dish and sprinkle with fetta breadcrumbs and seeds
Step 8
Bake for 20 minutes in oven until golden and crunchy on top
Step 9
Sprinkle with fresh parsley if like
