Ingredients

1 headnapa cabbage
med
cabbage
3 % salt by weight of
cabbage
2 % sugar by weight of
4 Tbspsugar
20 clovesgarlic
1 ½ cupscarrots
shredded
1 ½ cupsjicama
diced
1 cupradish
thin sliced
1 cupscallions
2.5 ozachiote paste
⅛ cuppaprika
3 Tbspgochugaru
⅓ cuplight tamari
or 1/4 cup soy sauce, diluted by 1/4 cup water
⅓ cupfish sauce
can be omitted
Instructions
Step 1
process napa cabbage
Step 2
toss cabbage in salt and sugar by weight and let sit overnight
Step 3
next day: make a slurry with everything listed after scallions, including the 4 tbsp sugar. add distilled water as needed to make the slurry slightly watery
Step 4
mince garlic and ginger by hand or with food processor and add to slurry
Step 5
drain cabbage and put into mixing bowl
Step 6
add carrots, jicama, radish, scallions
Step 7
add slurry and toss til evenly coated
Step 8
pack into perferred fermentation vessel. cover as needed
Step 9
refrigerate and in two weeks delicious kimchi :3
