Instructions

Mix dry mix ingredients in a large bowl and set aside.

Separate eggs. Set yolks aside for mayonnaise.

Place egg whites in a large bowl and beat, until thick and fluffy.

COAT IT

Place chicken first into the egg whites, followed by the dry mix. Place on a tray.

COOK IT

Heat oil in a large deep pot on medium heat for about 5 minutes. A wooden spoon handle will bubble when placed in the oil. This means you are ready to fry.
Step 9
Cook chicken in oil in batches for about 8 mins turning occasionally, until golden and cooked through.
Step 10
Drain on a paper towel.
