Instructions

Step 1
CCP: Wash & sanitize hands & prep area. Wear gloves & discard per Facility HACCP guidelines.
Step 2
1. Pound chicken breasts until somewhat flattened; season with salt and pepper.
Step 3
2. Spray grill or skillet with pan release spray.
Step 4
3. Cook chicken breasts for 6-8 minutes on one side; turn chicken over and cook additional 6-8 minutes or until internal temperature reaches > 165*F for 15 seconds.
Step 5
4. Transfer chicken to baking pan; top with bbq sauce, bacon and cheeses.
Step 6
5. Broil in oven until cheese is melted, approximately 4-5 minutes.
Step 7
6. Sprinkle with fresh tomatoes.
Step 8
CCP: Maintain 135*F or above.
Step 9
CCP—Cool—Product must reach 70*F or less within 2 hours and 41*F or below within 4 hours. Total cooling time should not exceed 6 hours. Separate into shallow pans as needed for proper cooling. Cover, label & date.
Step 10
CCP--Reheat (one time only) to 165* F. for 15 seconds within 2 hrs.
