Zatarain's Jambalaya Rice Dinner

It's an easy weeknight meal for the family. Leftovers freeze wonderfully, so I usually double the batch and freeze the extras.

Ingredients

0.5green bell pepper
cubed
0.5onion
cubed
1 poundPolish Sausage
thinly sliced
1 packageJambalaya Rice Mix
14.5 ozDiced Tomatoes Sweet Onions & Roasted Garlic
can, Petite-Cut, wth
2 ¼ cupswater
Instructions
Step 1
Heat a large skillet over medium heat, add in sausage, bell pepper, and onion and cook until onion is translucent.
Step 2
Add in rice mix, and stir until a incorporated with vegetables, for about a minute. Careful not to burn.
Step 3
Add in canned tomatoes and water. Stir and bring mixture to a boil. Reduce heat to low and cover. Simmer for 25 minutes, stirring every 6 minutes to prevent sticking.
Step 4
Remove from heat, let cool for 5 minutes and serve.
