Instructions
Step 1
In a large aluminum pan pat dry and inject pork butt with high quality apple juice. Place in fridge for overnight up to 12hrs.

Step 2
Pull meat from fridge 30-1hr before cook.
Step 3
Start smoker at 225°F
Step 4
Drain meat of apple juice and slather mustard on meat. Apply Kosmos Q seasoning liberally.

Step 5
Put in center of smoker grates. Smoke for roughly 6hrs at beginning of "The stall" (150°-165°F).
Step 6
Place meat in foil pan with some apple juice in pan. Add 5 pats of butter on top and wrap tightly with aluminum foil.

Step 7
Smoke to 203°F internal temp.
