Instructions

Step 1
Begin by soaking 2 gelatin leaves in cold water.
Step 2
In a saucepan, heat 160ml of cream with 50g of sugar.
Step 3
Squeeze out the excess water from the soaked gelatin leaves, and stir them into the warm cream. Gradually mix in another 340ml of liquid cream.
Step 4
Return the mixture to low heat and continue stirring.
Step 5
Pour the cream mixture into ramekins and let cool, then refrigerate for 2-3 hours until set.
Step 6
Meanwhile, prepare the peach puree by blending the peaches until smooth.
Step 7
Once the cream is set, spoon some peach puree over each ramekin.
Step 8
Chill the ramekins again until the peach layer is firm. Enjoy!
