Instructions
Step 1
For the jelly, in a small bowl or glass combine gelatin with ice cold water and place it in the fridge for 10 minutes or until gelatin is spongy.
Step 2
In a large bowl puree, the blueberries using an emulsion blender.
Step 3
Pass the blueberry puree through the sieve to remove skin and seeds.
Step 4
Transfer it to the saucepot, add sugar and 50ml of water, and bring it to a boil stirring occasionally.
Step 5
Remove from the heat and add gelatin. Mix well until gelatin dissolves.
Step 6
Divide the mixture between glasses, tilted in a muffin tin, and refrigerate until set( minimum 4 hours, the best overnight).
Step 7
For the cream, in a glass combine 10g gelatin and 50ml ice cold water. Place it in the fridge until gelatin is spongy(about 5 minutes)
Step 8
In a large pot combine double cream, milk, sugar and vanilla paste. Bring it to a boil (constantly stirring), but don't boil. Remove from the heat and add gelatin. Mix well until gelatin dissolves. Let it cool to room temperature.
Step 9
Add completely cold cream mixture to the glasses and return to the fridge to set for at least 3 hours.
Step 10
Before serving garnish with blueberries and mint leaves and enjoy!
