Instructions

Step 1
Preheat the oven to 180°C (350"F). Line two large baking trays with foil and then baking paper.
Step 2
Make a marinade by combining all the ingredients except the chicken in a food processor and blitz until everything is blended and smooth.
Step 3
Arrange the chicken pieces on the prepared trays in one closely packed layer. (The corners of the pan get hotter, so always place the thickest pieces of chicken there as they're less likely to burn.)
Step 4
Pour the marinade over the chicken to coat it generously. You may not need all the marinade, in which case store it in a sealed glass jar in the fridge for up to 3 months.
Step 5
Bake for 30 minutes, then turn and bake for a further 20 minutes. Turn one more time and cook for another 15-20 minutes. You want it lightly charred in places, so check it and maybe give it one more turn and another 15 minutes if necessary.
Step 6
I like to serve it hot on steamed rice (page 32) or cold as part of a picnic or an office lunch.
