Step 1
Peel and boil the potatoes until cooked through then transfer to a bowl. Heat up half the oil in a pan and add the chopped onion, achiote powder and salt. Cook for 5 minutes until cooked through and soft. Combine with the potatoes and mash everything together until fully combined, then let rest in the fridge for a half hour.
Step 2
Make patties with your hands and fill with about 1tsp of the mozzarella. In an oiled pan, cooked on high heat on both sides until brown. Serve topped with whatever garnish you’d like and enjoy!
