For the meatballs

Step 1
Peel the asparagus then add the peels to a pot with the water and salt and bring to a boil and simmer for 3 minutes then remove the skins . This is the asparagus broth for the base of the soup

Chop just the ends of the asparagus off then cut into pieces add to the asparagus water and cook for 8 minutes then remove and reserve the tips for garnish

Melt butter in a pot whisk in the flour cook a minute then start adding the asparagus broth in slowly whisking until smooth . Add the asparagus back in reserving the tips for later then add lemon juice salt pepper and cream and blend until silky smooth

For the meatballs
Step 4
Soak bread in water then squeeze water out and add to the meat( I use a pork beef mix) with onion salt pepper egg and mix then form into meatballs and fry on a pan to brown . Add into the soup then let them sit a few minutes to soak up the flavor. Serve into bowls then add the asparagus tips and enjoy
