Grandma Adsitt’s Award Winning Apple Cake

Original recipe calls for a Bundt pan. I bake in a half sheet foil pan. It’s hard to tell when it’s done since it is so moist with clumps of apples. I test it with a knife in the middle and get a good look. Usually takes longer than stated time. I have turned up the oven temperature if I’m in a hurry.

Instructions

Step 1
Mix oil and sugar Add eggs one at a time. Mix cinnamon and baking soda into flour. Add dry ingredients and stir till mixed. Add vanilla. Fold in chopped apples (1/2 inch chunks) Add nuts and raisins.
Step 2
Bake in a greased Bundt pan for 1 hour at 325 degrees. Cover with foil if starts to brown too much before it is done. Cool 45 minutes. Invert on a platter. Dust with powdered sugar when cooled or while still hot you could top with a glaze such as “Brown Sugar Glaze for Apple Cake” or serve it on the side.
