Instructions
Making the Casserole
Step 1
Preheat oven to 350
Step 2
In large skillet, heat the olive oil over medium heat. Add the bell peppers, onion, and garlic and cook, stirring occasionally, for 4-5 minutes, until the onion is softened and starting to look translucent.
Step 3
Transfer the sauteed peppers and onion to a 9x13 casserole dish, add black beans, corn, salt, and jalapeno, and stir to combine. Spread the mixture in an even layer over the bottom of the pan.
Step 4
In a large bowl, combine the turkey, cumin, and salt. Toss to combine, then spread the turkey over the bean mixture in the casserole and top evenly with the cheese.
Step 5
Bake for 30 minutes, or until the cheese is bubbling.
Make the Sauce
Step 6
Blend .5 c of parsley, sour cream, lime juice, and 2 tbsp water until smooth.
Step 7
Drizzle sauce over casserole, garnish with parsley, serve.
