Instructions
Step 1
Bring squash and enough cold water to cover by 1 inch to boil in small saucepan. Reduce heat, cover and cook until squash is tender, 15 minutes. Frozen is easiest. Drain. Puree in a food processor or mash.

Cook macaroni and set aside (raw macaroni will double when cooked
Step 3
Whisk milk and flour until smooth. Add cream cheese. Cook over medium heat, whisking, until mixture comes to boil, 5 minutes.
Step 4
Whisk salt, dijon and garlic in to milk mixture until thickened.
Step 5
Remove from heat. Stir in cheeses and squash
Step 6
Add cooked pasta. Pour in to baking dish: Top with crushed saltines and cheese. Broil until bubbling. 4-5 minutes. Let stand 5 minutes before serving.
