Healthy Shrimp Boil Foil Packets

Shrimp boils are a summer favorite, but it's no secret that they take plenty of time and effort. These grilled shrimp foil packets make it quick and easy.

Ingredients
4 servings
2 lbshrimp
large, peeled and deveined
2cloves garlic
minced
2 earscorn
each cut crosswise into 4 pieces
1 lbred bliss potatoes
chopped into 1-inch pieces
1zucchini
chopped into 1-inch pieces, added for extra veggies
2 Tbspextra-virgin olive oil
1 Tbspold bay seasoning
kosher salt
freshly ground black pepper
2 Tbspparsley
freshly chopped
1lemon
sliced into thin wedges
italian sausage
Instructions
Step 1
Preheat grill over high heat, or preheat oven to 425°.
Prepare Foil Packets:
Step 2
Cut 4 sheets of foil about 12 inches long.
Step 3
Divide shrimp, garlic, sausage, corn, potatoes, and zucchini evenly over the foil sheets.
Step 4
Drizzle with oil, then add Old Bay seasoning and season to taste with salt and pepper. Toss gently to combine.
Step 5
Top each mixture with parsley, lemon wedges, and 1/2 tablespoon of butter each (instead of 1 tablespoon).
Seal Packets:
Step 6
Fold foil packets crosswise over the shrimp boil mixture to completely cover the food.
Step 7
Roll top and bottom edges to seal them closed.
Step 8
Place foil packets on grill and cook until just cooked through, about 15 to 20 minutes (or transfer to oven and bake for 20 minutes).
