Grilled shrimp salad with oranges and mixed greens

Adapted from a recipe by Playjoy. I switched the bitter greens for mixed greens (for ease) and added vegan blue cheese crumbles for extra flavor.

Step 1
In a bowl, combine shrimp, ⅔ tsp olive oil, 1 ¼ tsp lemon juice, the garlic and a pinch of salt and pepper. Toss until shrimp are well coated.
Step 2
Heat a grill or skillet to medium-high heat. Add shrimp and cook just until pink and firm, about 2 minutes per side. Transfer to a plate or bowl to cool. Option #2: Frozen shrimp can be cooked in air fryer at 380F. Five minutes for pre-cooked and 10 minutes for raw.
Step 3
While shrimp cool, cut orange into segments and place in a bowl with any excess juice. Add mixed greens. Drizzle with remaining 2 tsp olive oil and sprinkle with salt and pepper. Toss to combine.
Step 4
Once shrimp are mostly cool, transfer on top of salad, sprinkle with blue cheese crumbles and serve immediately.
