Roasted Vegetables
Instructions
Step 1
1. Preheat oven to 375°F. Line a baking sheet with parchment paper and spray or coat with cooking oil. Place salmon on baking sheet.
Step 2
Combine chopped herbs, lemon zest, salt, and pepper. Sprinkle over salmon filets.
Step 3
Bakr for 10 minutes or until opaque throughout. Squeeze lemon juice over salmon filets before serving.
Roasted Vegetables
Step 4
Preheat oven to 375°F.
Step 5
Use any combination of the following (washed and chopped into bite-sized pieces): red potatoes, onion, er squash, mushrooms, asparagus, carrots, zucchini, or brussel sprouts.
Step 6
Toss with garlic and olive oil. Sprinkle with herbs of choice: rosemary, oregano, thyme or basil.
