Instructions

Step 1
Pre-heat oven to 180C / 160 Fan/ gas 4. Add hot boiling water from the kettle halfway in a roasting tin, then put it in the oven. This acts as a steamer. Cut a large piece of greaseproof paper and foil (about 30 x 40cm), then add butter to the paper and place it on to of the foil (butter side facing down).
Step 2
Tip the butter, flour, vanilla essence, and sugar in a bowl and mix until the butter has disappeared. (I used an electric whisk, but you can also use a food processor). Gradually pour the milk in with the dry ingredients and mix until you form a dough, knead the dough for a couple of minutes.
Step 3
Sprinkle flour onto the surface roll out the dough into a rectangle/square shape, and spread the jam on the dough, leaving an inch gap around the edges, lift, and roll it over like, then roughly pinch the sides. Carefully lift the jam roly-poly onto the greaseproof paper with the foil and loosely roll it over, scrunch both the edgesto seal it. (try not to wrap it too tightly as the pudding will expand quite a bit). Gently lift and place it into the over directly above the roasting tin, and cook for 1 hour.
Step 4
Leave to cool for 5 minutes before carefully unwrapping the foil and paper. Cut into slices and serve.
