1beef eye fillet

Frozen chips

½ Tbspground black pepper

½ Tbspwhole peppercorns

110 mlsbeef stock

55 mlsthickened cream

2 tspbrandy

Instructions
To prepare the meat
Step 1

Remove beef fillet from the fridge and bring to room temperature.
Rub with olive oil on both sides, then sprinkle with salt.
Place griddle pan in the hob and heat.
Chips - 12-14 mins
Step 2
Add chips to air fryer at 200* and cook for 8 mins
After 8 mins, shake the chips to loosen them, and cook for a further 4-6 mins until crisp
Well Done Steak - 12 mins
Step 3
Put the steak in the griddle.
Turn after 6 mins.
After a further 6 minutes, check temperature - it should be at least 68 Celsius.
Remove and leave to stand for a minute or so before serving.
Medium Steak - 8 mins
Step 4
Put the steak in the griddle.
Turn after 4 mins.
After a further 4 minutes, check temperature - it should be at least 57-63 Celsius.
Remove and leave to stand for a minute or so before serving.
Rare Steak - 4mins
Step 5
Put the steak in the griddle.
Turn after 2 mins.
After a further 2 minutes, check temperature - it should be 49-52 Celsius.
Remove and leave to stand for a minute or so before serving.
Peppercorn Sauce - 11mins
Step 6
Cook shallots for 30 seconds until soft. Add coarsely ground black pepper for another 30 seconds until fragrant
Add brandy and fry off for 1-2 mins
Add beef stock and boil for 3-4 mins until reduced by about half, then add the whole peppercorns
Add thickened cream, simmer for 3-4 mins until reduced by half and can coat the back of a spoon
Serve

Toss the salad in a little of the French Dressing
Grate Parmesan over the top
