Ingredients

Mashed Potatoes
4russet potatoes
large, peeled and roughly sliced
½ cupyogurt
1 cupcheddar cheese
shredded
¼ cupolive oil
sea salt
to taste
Shepherds Pie Ingredients
2 tbolive oil
2 poundsground beef
or lamb
½ cupyellow onion
peeled and small diced
1 cupcarrots
peeled and small, diced
1 cupcelery
small, diced
4 clovesgarlic
finely minced
¼ cuptomato paste
1 cuppeas
1 cupbeef stock
fresh rosemary
chopped, to taste
salt
to taste, sea salt
black pepper
fresh cracked, to taste
2 teaspoonsfresh parsley
chopped
Instructions
Step 1
Preheat the oven to 400°.

Mashed Potatoes
Step 2
Place roughly chopped potatoes in cold water to remove some starch. Just until water starts boiling.
Step 3
Add the potatoes to a large pot of boiling salted water and cook for 20 minutes or until tender (start the timer after boiling with potatoes in the pot)
Step 4
Strain and add to a mixing bowl along with cheese and salt and pepper. Mix slowly. Once cheese has melted and the yogurt and olive oil and blend into smooth. Add salt/pepper to taste. Set aside and keep warm with lid.
Shepherd's Pie
Step 5
Add Olive Oil to a cast iron skillet or saute pan over medium heat and add in the beef (or lamb). Cook until browned.
Step 6
Next, add in the onions, carrots, celery and garlic and sauté for 6-7 minutes.
Step 7
Mix in the tomato paste and cook on low heat for a further 3 to 4 minutes.
Step 8
Finish by mixing in the peas, rosemary, beef stock and salt and pepper to taste.
Step 9
Transfer the mixture to a 10x5 casserole dish and pour it in.
Step 10
Top off with the mashed potatoes making sure to cover the beef (or lamb) mixture completely.
Step 11
Bake in the oven for 25 minutes or until the potatoes are lightly browned.
Step 12
Take out of oven and sprinkle with cheese and put back in oven until melted.
Step 13
Garnish with parsley and serve.
