Instructions
Step 1
Halve 4-5 small/medium lemons and scoop out the insides if you’d like to make your possets inside the lemons. If not set aside 8-10 mini dessert cups.
Step 2
Add the inside of the lemon to a sieve and squeeze out the lemon juice into a bowl. Set aside 35ml and save the rest for any future recipes.
Step 3
In a saucepan add your cream sugar and lemon zest. Let this simmer for 4-5 minutes, stirring frequently, without allowing it to boil.
Step 4
Remove from the heat and add in lemon juice, which will cause a slight thickening immediately, and vanilla. Stir and sieve to remove the zest.
Step 5
Pour into the lemon skins or dessert cups. Refrigerate for three hours to allow them to set.
Step 6
Serve and enjoy!
