Instructions

Step 1
In a small bowl, mix the custard powder with 1/4 cup of cold milk to make a smooth paste. Set aside.
Step 2
Puree the diced mangoes in a blender until smooth. Set aside.
Step 3
In a saucepan, heat 2 cups of milk over medium heat. Bring it to a gentle simmer.
Step 4
Once the milk is hot, add sugar and stir until dissolved.
Step 5
Gradually pour the custard mixture into the hot milk while continuously stirring.
Step 6
Cook the custard mixture over low heat, stirring constantly, until it thickens. This usually takes about 5-7 minutes. Make sure it doesn't stick to the bottom of the pan.
Step 7
Remove the custard from heat and let it cool slightly.
Step 8
Stir in the mango puree until well combined. Taste and adjust sweetness if needed.
Step 9
Transfer the mango custard into serving bowls or glasses.
Step 10
Cover with plastic wrap or cling film directly touching the surface of the custard to prevent a skin from forming.
Step 11
Refrigerate for at least 2-3 hours, or until chilled and set.
Step 12
Before serving, garnish with pomegranate and chopped nuts if desired.
