In a kadhai, add ghee.

Add crushed cashew, almonds and raisins and fry till they turn golden brown. Then add the vermicelli and keep stirring till it turns golden brown.
NOTE: Vermicelli burns easily so keep stirring continuously.

Add milk and keep stirring again. The milk will begin to thicken.

Crush elaichi (cardamon) in a mortar and pestle. Alternatively, you can use cardamon powder.

A few minutes after the milk boils and once the vermicelli has cooked, add grated nutmeg and crushed elaichi / powder to the payasa. Then turn off the flame.

With the flame off, add sugar and mix well. Wait for the sugar to dissolve.
