Instructions

Cookies

Step 1
Cream shortening and brown sugar, then add yolks, beating after each one. Add syrup and beat well.
Step 2
In a separate bowl, mix flour, baking soda, salt, cinnamon, and ginger together.
Step 3
Add the flour mixture to the syrup mixture a little at a time, alternating with the warm water, beginning and ending with the flour. Chill dough at least an hour or overnight.
Step 4
Roll out to 1/8 inch thickness and use a biscuit cutter to get 2 1/2 to 3 inch wide cookies. Place cookies on a cookie sheet lined with a silicone mat and bake at 375 degrees for 8 minutes, or until they just start to brown around the edges.

Frosting

Step 5
In the bowl of a stand mixer whip butter until lighter in color, about I minute. Add the vanilla and cinnamon, scrape the sides, and beat until incorporated.
Step 6
Add one cup of the powdered sugar and beat for one minute. Pour in IT milk, beating for an additional minute after adding.
Step 7
Repeat for the remaining powdered sugar and milk, ending with the powdered sugar. Be sure to beat for a minute between each addition and scrape the sides as needed.
Step 8
Add more milk or powdered sugar as needed to achieve the desired thickness.

Assembly

Step 9
Spread a thin layer of the frosting on the flat side of one cookie and sandwich it with another cookie. Repeat with remaining cookies.
