Step 1
1) Finely dice your vegetables and sauté with your pancetta in a little olive oil until onions are soft it you have fussy eaters you can blend the veg to hide it in the sauce).
Step 2
Add your mince to the pan and break up the mince & season with salt & pepper.
Cool until meat is fully browned.
Step 3
Add the tomato purée, passata, beef stock & balsamic vinegar. Add about 100ml of water to the empty jar of passata & shake to get all the tomato sauce and add to the pan.
Step 4
Simmer for at least 25mins (ideally 45mins - 1hr on low). Stir occasionally.
Step 5
Before serving add a handful of grated Parmesan & fresh basil.
