Step 1
Make pastry into a ball. Put in fridge 1 hour. Add 100g sugar to rhubarb chunks, leave to macerate 1 hour. Roll out pastry and lay rhubarb on top. Bake 10mins at 180deg.
Step 2
Combine eggs with cream and sugar. Pour over rhubarb and bake for further 15-20mins.
