Step 1
To start, take 1/2 cup all purpose flour, yeast, sugar, honey and 1/2 cup water. Mix well and let sit for 20-30 minutes. After, add 90 grams of flour (set aside 60 grams for kneading), all water, olive oil, salt and Greek seasoning. Knead lightly for 10 minutes until a dough ball is formed. (It might feel and seem dry but it will come together.) let dough rest for 30 minutes on a floured surface covered with a towel. After 30 minutes, lightly knead dough once more on a lightly floured surface. Dough should be formed and slightly sticky to the touch. Place dough in a bowl lightly coated in olive oil, covered and let rise for 1 hour at room temperature. At this point it can be placed in fridge for 16-24 hours if you choose this method. If not, divide dough into 9- 75 gram balls and lightly knead each ball. Once they are formed, cover with a towel and rest for 30 minutes. After 30 minutes roll out the dough balls using a rolling pin and heat a cast iron skillet and lightly coat with olive oil. Once it starts to smoke place rolled dough in skillet and cook each side for 1-2 minutes. Repeat the same steps if doing slow rise in the fridge.
