Ingredients

2 packageschuck steak
2 packagesboneless short rib
1 packageBrisket
1.5 TablespoonsFish Sauce
for more daring, savory depth, use 2 tablespoons
2 clovesGarlic
crushed or fine mince
1 teaspoonsugar
½ teaspoonfresh ground black pepper
6Hamburger buns
Can also uses Potato rolls or regular hamburger buns
1 packagesliced American cheese
can also try cheddar or swiss
1 packagebutter lettuce
1tomato
1 bottleBurger sauce

Instructions
Hamburger Meat Prep
Step 1
Cut all of the chuck steak and all of the boneless short ribs and just 1/2 half of the brisket, into 1 inch cubes and place into labelled freezer bags
Step 2
Place labelled baggies with cubed beef into freezer for 1 hour
Step 3
Remove baggies of cubed beef from freezer and feed the cubes into a grinder using the medium grinding plate. (Use the following ratio: 2 cubes of chuck for every 1 cube of short rib and 1 cube of brisket [2:1:1].
( You can also use a ratio of 4:2:2)
Step 4
[Optional]: Grind the meat a second time to ensure a more consistent texture and distribution of lean meat and fat throughout your ground beef.
Combine Meat with Umami Mix
Step 5
Using a scale, measure 2 lbs of ground beef
Step 6
In a small bowl, combine fish sauce, garlic, sugar and black pepper.

Step 7
Add the Umami marinade to the ground beef and combine in a larger bowl by hand until all the ingredients are mixed together well.
Step 8
Form the Umami Beef into 150g patties, cover top and bottom of patty with piece of wax paper and place into 1 gallon freezer baggie.
Step 9
Store baggies in freezer or proceed with cooking the patties
Cooking Umami Burgers
Step 10
Heat up a pan or griddle to medium-high heat
Step 11
Use a little bit of Bacon fat to grease the pan or griddle
Step 12
Take any packaging off of the hamburger patties and place on the pan or griddle to cook them.
Step 13
Try flipping them once every 2 minutes
Step 14
Sear/Cook the burgers until you see fluid on top that is mostly clear (not red or pink), then quickly remove.
Step 15
Should produce a perfect medium-cooked burger

Add butter to pan or griddle and lightly toast the buns

Add other condiments like cheese, lettuce, onion, and tomato and enjoy!
