Step 1
Melt butter in a large pan. Saute shallots over medium heat until softened and add mushroom to the pan. Continue to cook until liquid evaporates Add spinach to the pan and cook until it wilts. Remove from heat. Mix in pesto, cheese, salt and pepper. Preheat oven to 375°F. Place a sheet of puff pastry on a floured surface and roll out slightly. Spoon mushroom mixture into the center third of the puff pastry Using a sharp knife, cut the 2 outside sections into 1-inch horizontal strips just to the center section. Fold 1/2-inch borders at top and bottom inwards. Next, starting at one end, begin folding the pastry strips over the mushroom filling, alternating the sides to create a braid appearance. Brush with egg and sprinkle with Parmesan. Bake for about 25 minutes. Enjoy!
