Instructions

Step 1
CCP--Wash & sanitize hands & prep area. Wear gloves & discard per Facility HACCP guidelines.
Step 2
1. Follow package directions for cooking pasta; drain, reserving pasta water.
Step 3
2. Meanwhile, in large skillet over high heat, add oil. Brown ground beef until no red juice remains, drain well; discard fat. Reduce heat to medium and add salt, pepper, garlic, onions, chili powder, worcestershire sauce, tomato paste, parsley and reserved pasta water. Simmer for 8 to 10 minutes.
Step 4
3. Add pasta and half of the cheese. Stir to combine. Add remaining cheese on top and cover with lid.
Step 5
CCP--Final Cooking Temperature must reach 165 * F. for at least 15 seconds.
Step 6
CCP: Maintain 135*F or above.
Step 7
CCP--Cool--Product much reach 70*F or less within 2 hours and 41*F or below within 4 more hours. Total cooling time should not exceed 6 hours. Separate into shallow pans as needed for proper cooling. Cover, label & date.
Step 8
CCP--Reheat (one time only) to >165 * F. for at least 15 seconds within 2 hrs.
