Instructions

Step 1
Place the cheeses, chorizo, green onions, chilies and salt and pepper to taste in a bowl and mixed together.
Step 2
Divide the mixture between four flour tortillas and top with the remaining tortillas
Step 3
Thanks brush a large non-stick and heavy base frying pan with oil and heat over medium Heat. Add one quesadilla and cook, pressing it down with a spatula, for five minutes, or until the underside is crisp lightly brown.
Step 4
Turn over and cook the other side until the cheese is melting. Remove from pan and keep warm. Cook the remaining quesadillas individually.
Step 5
Cut each quesadilla into quarters arrange on a warmed serving plate and serve garnish with lime wedges
