Instructions

Step 1
In a stainless steel bowl, vigorously whisk the egg yolk and lemon juice together until the mixture thickens and doubles in volume
Step 2
Place the egg mixture in the top of a double boiler set over medium-low heat. Slowly drizzle the melted butter into the egg mixture, while whisking continuously. Continue whisking until the sauce thickens and doubles in volumes.
Step 3
Remove from the heat and whisk in salt and pepper
Step 4
Serve hot. If the sauce gets too thick as it cools, whisk in a few drops of warm water before serving
