Shawarma Chicken Bowls with Rice, Tzatziki & Almonds

Instructions

Step 1
Wash and dry the zucchini; quarter lengthwise, then thinly slice crosswise.

Pat the chicken dry with paper towels; place in a bowl. Season with salt, pepper, and enough of the spice blend to coat (you may have extra). Toss to coat. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the seasoned chicken in an even layer. Cook, without stirring, 3 to 4 minutes, or until lightly browned. Add the sliced zucchini; season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until browned and the chicken is cooked through. Add the currants and vinegar (carefully, as the liquid may splatter). Cook, stirring frequently, 1 to 2 minutes, or until combined. Turn off the heat.

Serve the warmed rice topped with the cooked chicken and zucchini. Drizzle with the tzatziki and garnish with the almonds and peppers. Enjoy!
