This recipe is a perfect beginner-friendly keto dinner that's ready in under 30 minutes. It's a cheesy and satisfying alternative to traditional mac and cheese, with all the flavor and none of the carbs!

Instructions
Step 1
Prepare the cauliflower: In a large pot, steam or boil the cauliflower florets for 5-7 minutes, or until tender-crisp. Drain well and set aside. Tip: You can also microwave the cauliflower for a quicker option. Place the florets in a microwave-safe bowl with a splash of water and microwave on high for 4-5 minutes, stirring halfway through.
Step 2
Make the cheese sauce: In a saucepan over medium heat, melt the butter. Whisk in the heavy whipping cream and cream cheese until smooth. Bring to a simmer, then reduce heat to low.
Step 3
Add the cheese: Gradually add the cheddar and mozzarella cheese, a handful at a time, whisking constantly until melted and smooth. Season with garlic powder, onion powder, salt, and pepper.
Step 4

Serve immediately: Top with chopped cooked bacon and chives for extra flavor (optional).
