Instructions
Step 1
Heat some oil in a heavy-bottomed pan on medium-high. Add the ground pork and fry until cooked. Stir in cumin, chili powder, garlic powder, and salt.
Step 2
Remove the pork to a large bowl and add the onions to the pan. Fry until translucent, add garlic, and fry for one more minute. Remove most of the onions and garlic to the same bowl as the pork.
Step 3
Add more oil if necessary, then add the flour, stirring for one more minute. Pour in the water, stirring and scraping up browned bits. Pour in enchilada sauce and stir.
Step 4
Add 1 cup of cheese to the bowl with the pork and mix. Preheat your oven to 350F and pour just enough of the sauce into a 9x13in pan to coat the bottom.
Step 5
Set up an assembly line for your enchiladas. First, dip a tortilla in the enchilada sauce and set it in the baking dish. Then scoop some of the pork mixture into the tortilla. Finally, turn the enchilada so that the seam is on the bottom. Repeat until you’ve used all the pork mixture.
Step 6
Pour the rest of the enchilada sauce over the enchiladas and sprinkle with remaining cheese. Bake for 20 minutes, then let rest for 10 minutes before serving with rice, cilantro, and hot sauce.
