Cherry-Poppy Seed Twins
An easy drop cookie recipe that is perfect for Purim, Christmas or Valentine’s Day!  Recipe makes 2 1/2 dozen cookies.

Heat oven to 300 degrees Fahrenheit

In a large bowl, beat powdered sugar and softened margarine until light and fluffy.

Add vanilla extract and large egg and blend well.

Lightly spoon flour into a measuring cup. Level it off with a butter knife. Add to mixing bowl mixture. Repeat for second cup of flour.

Add poppy seeds and salt. Mix everything well.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Make a thumbprint indentation in center of each cookie with your thumb.

Fill each thumbprint with about 1/2 tsp of cherry preserves.

Bake at 300 degrees Fahrenheit for 20-25 minutes or until edges of cookies are light golden brown.
