Coconut Cookies

Large batch of melt in your mouth light texture with crunchie bits and a hint of coconut. Recipe can be doubled and freezes well. Substitute Festive Rice Krispies for a holiday treat and top with crushed red or green cereal pieces.

Instructions

Step 1
Preheat oven to 350 F

Mix sugars, crisco, vegetable oil, vanilla and egg.

In a separate bowl combine remaining ingredients.

Mix wet and dry ingredients until thoroughly blended.

Drop by spoonfuls ( I use a small cookie scoop) on to cookie sheets lined with parchment or silicone baking sheets.

Bake 6-8 minutes or until golden brown.
