Double Peanut Scotchies
Peanut butter, peanuts and butterscotch chips = Yumm! Recipe makes 4 dozen cookies.

Step 1
Heat oven to 350 degrees Fahrenheit.

In a large bowl, beat brown sugar and margarine or butter until light and fluffy.

Add peanut butter and eggs. Mix well.

Lightly spoon flour into measuring cups. Level them off with a butter knife. Add to batter along with baking soda. Mix in well.

Mix in peanuts and butterscotch chips. (MSS NOTE: I would coarsely chop the peanuts for easier eating, especially for children and senior citizens.)

Drop by rounded teaspoonfuls onto ungreased cookie sheets.

Bake at 350 degrees Fahrenheit for 9-12 minutes or until golden brown.

Immediately remove cookies from cookie sheet with a metal or silicone spatula.
