Instructions

Step 1
Firstly, separate the egg whites from the yolk. Place the yolks in a smaller bowl, while putting the egg whites in a bigger bowl, where you’ll whisk them either by hand or with an electric whisker like a handheld or a stand-by mixer.

Step 2
To the now fluffy egg whites (make sure they pass the upside down test), add the sugar and mix well until the sugar melts into the egg whites. You’ll just have made a meringue.

Put the meringue aside and get your yolks. Gradually, start adding the oil to the yolks, mixing it in really well with a spoon until it thickens and gets slightly lighter. Add the vanilla extract for the aroma.

It’s time to combine the two mixes. For that, you have to make sure to use a spatula. Gradually pour the yolk mixture over the meringue and mix it in with the spatula clockwise, from bottom to top, so you fluff everything up. Now add the flour and baking soda and use the same method to mix them in.

Place 1/4 of the batter into a smaller bowl and add the cocoa powder, mix it in. You can also add a rum extract if you like the aroma, and i advise you to add around 1 tbsp of milk so the batter doesn’t become too thick.

Step 6
Get your loaf pan and cover it with a baking sheet or butter it so it doesn’t stick, add the batter to the pan. It is simple, one spoon of the vanilla batter followed by one spoon of the cocoa batter, repeat until there’s none left. Add the chocolate chunks on top.

Preheat the oven then place the pan in, it should be done in around 20 minutes.
