Instructions
Step 1
Oven 325. Liberally butter two 6x3 inch round cake pans (or one 9x3 round pan) and dust with flour. Tap out excess flour.
Step 2
Sift together the flour, baking powder, and salt into a bowl and set aside.
Step 3
In a saucepan over med-low heat, combine the butter and milk and heat, stirring occasionally, until the butter is melted, 3-4 min. Remove from heat, add vanilla, and cover to keep warm.
Step 4
In stand mixer fitted with whisk attachment, whip eggs and sugar on high speed until light and airy, about 5 min. Add hot milk mixture and whisk by hand until incorporated. Add flour mixture and whisk by hand until incorporated.
Step 5
Divide batter evenly between pans. Bake until tops are light brown and tester comes out clean, 20-22 min, rotating pans half-way through. Let cakes cool completely in pans on wire racks, about 2 hrs. Run a thin blade around edge of cakes, remove from pans, and continue cooling completely before using or wrapping in plastic wrap and chilling.
